Why Burrowing Owls? Why Vegan? Who Are We?
We thought this restaurant & bar should represent a community spot. A place where locals gathered and had meaningful conversations. A place where cell phones would be discouraged and there would be no distractions like televisions. A dimly lit, warm and welcoming spot where you wouldn’t be a stranger for long. We thought an Owl would represent a part of this idea. Owls represent Wisdom and trying to see through masks to find truth; we all hide behind something and this place will be here to allow those masks/walls to come down, be comfortable in your beliefs no matter what, and speak and hear each other’s truths. So we asked ourselves, "what sort of owl?" Burrowing Owls are one of only two social owls. They reclaim abandoned prairie dog homes for their homes. They are also known as “Nature’s Clowns”. So we envisioned a bunch of owls, hanging out in a dark spot, being nature’s clowns and having a good time. Once we read that they were native to Colorado we were sold on the name

Before the Burrowing Owl was even a thought, we (Cody and Tyler/owners) went from being vegetarians to vegans. The more we learned about all things vegan, the harder it was to work at the restaurants where we were working. And there wasn't a vegan restaurant or bar for us to go work at. So we thought, “we better get a move on opening that bar sooner than later”. We wanted to open something that engulfed our new vegan principles but encompassed what we love about the service industry.
We love restaurants and bars because you meet such a diverse amount of people. We think we all become a little less weird the more we hear about other people's life experiences.
Being vegan for us is about Animal Rights & Welfare and the principle that we believe we are born into this world free. And if we believe we are born into this world free we believe so are the other living beings. If we don't want force against us and our freedom, why should we be able to take away any other living beings freedom? We would be hypocrites. We wanted to build something that supported those beliefs.
